This recipe uses only the inside of the marrow which is often thrown away when the marrows are stuffed. In this way two dishes can be made from the same marrow.
Insides of one large or several 2 cream cheese small marrows 1 0 flour
1 lb minced lamb A few sprigs dill or chervil
2 eggs 2 tablespoons olive oil
1 large grated onion Salt and pepper
Seed the marrow flesh and put it into a bowl together with the other ingredients and knead them all well together. Use just enough flour to give a bit of firmness and season well. Shape into rissoles and fry in hot oil.
