1/4 cup olive oil
1/2 cups dry white wine
1/2 cups chopped onion
4 tablespoons tomato paste
1 cup julienne cut green
1 cup boiling water peppers
1 pound fillet of sole, cut in
1/2 cups peeled, diced bite size pieces potatoes
1 pound raw shrimp,
2 teaspoons salt shelled and deveined
1 teaspoon freshly ground
1 pound crab meat black pepper
2 tablespoons minced parsley
1 clove garlic, minced Sauteed French or Italian
2 teaspoons finely chopped bread slices
bay leaves

Heat the oil in a casserole; sauté the onion 10 minutes. Add the green peppers and potatoes; cook 5 minutes. Mix in the salt, pepper, garlic, bay leaves, wine, tomato paste, and boiling water. Cover, and cook over low heat 20 minutes. Add the fillet of sole; cook 15 minutes. Mix in the shrimp and crab meat; cook 10 minutes. Taste for season-ing. Sprinkle with the parsley. Arrange sautéed bread around the edge of the casserole.

Serves 6-8.

Serve with a white Burgundy, a dry German white wine, a Loire Valley wine like Pouüly-Fumé, or a rosé.
