Oil Pastry

This is a flaky crust that can be made quickly in a food processor using the steel blade; it can also be made by stirring with a fork. Use a very mild-flavored oil for dessert pies.

Makes two 9-inch crusts

2 cups unbleached flour

1 teaspoon suit 1/2 cup oil

4 to s tablespoons cold water

1. Preheat the oven to 425°F.

2. In a food processor bowl, mix the flour and the salt. In a separate cup, first pour the oil, then 4 tablespoons water, but do not mix. Pour them slowly into the processor while it is running. It should make a soft dough. Add a little more water, if necessary. Roll out on a floured surface, or press right into the bottom of the pie pan with your fingers.

3. Halve the recipe for a single filled pie. Prick with a fork and bake for 1 minutes. Cool before filling.
