Orange and Tamari Dressing

Serves 2-4 This is very good with greenleafed vegetables such as raw spinach or salad leaves. It is also a useful dressing for those who dislike using vinegar.

150ml (lApt) freshly squeezed orange juice 1 tsp grated orange peel

2 tbsp tamari sauce 1 tsp finely chopped fresh root ginger

3 tbsp coldpressed olive oil 1 clove garlic, peeled and crushed

Raw Apple Sauce

Serves 2-4

This is a recipe ıvhich has many different uses. Serve the sauce cold as an accompaniment to lean, grilled pork chops or cold cuts of chicken and turkey. This sauce is also great served zvarm with plain lowfat frozen yoğurt and an extra sprinkling of cinnamon.

4 eating apples, cored and chopped (preferably unpeeled juice of Vı lemon a little grated nutmeg a pinch of cinnamon 50100ml (24-fl oz) apple juice

Blend the apples with the lemon juice and spices in a food processor. Add sufficient apple juice to achieve the desired consistency. The sauce may be warmed through gently in a small saucepan if preferred, but do not let it boil.
